This Bourgogne Blanc is declassified Puligny Montrachet, Chassagne Montrachet and Meursault.... so don't let the fact it is 'just' a Bourgogne Blanc fool you - it is so much more than that!

Vinification starts with whole bunches being pressed in a pneumatic press at low pressure that gives a slow extraction and left on the lees for 12 months in 500 litre French oak casks (normal is 228 litres). This allows a more subtle oak interaction and the contact with the lees gives the wine an added creaminess.
